Keeping a Japanese Blade From Rusting
Japanese kitchen steel is prized for taking an exceptionally fine edge. The property that allows that, a harder and often higher-carbon steel, also makes it somewhat less forgiving about moisture than softer European stainless.
Why the Edge Is the Vulnerable Part
Corrosion begins where the metal is thinnest and the protective layer is most easily disturbed, which on a slicing blade is the cutting edge itself. A blade can look pristine across its face and be pitted along the edge.
That pitting is what causes the tearing and drag that people interpret as bluntness. Often the blade is not worn; it is corroded microscopically along the working edge.
What Accelerates It
- Standing water, particularly in a drawer or a closed container
- Acidic residue from tomatoes, citrus, apple and vinegar left on the steel
- Salt, whether from seasoning or from brine and pickling work
- Dishwasher detergent, which is aggressive toward fine edges
- Storage in humid environments without airflow
The Routine That Prevents It
Rinse immediately after use rather than leaving the tool on the side. Acidic residue does its damage within hours, not days.
Dry completely before storing, which means actively drying rather than assuming it will evaporate. Blades stored damp in a closed drawer are the most common case of avoidable corrosion.

Oiling
For blades stored for extended periods, or in a humid kitchen, a very thin film of food-safe mineral oil on the steel provides a barrier. Camellia oil is the traditional Japanese choice and is widely available.
Vegetable oils are not suitable for this, since they oxidise and become sticky over time. A dedicated food-safe mineral or camellia oil is inexpensive and lasts years.
If Rust Has Already Started
Light surface rust can usually be removed. A rust eraser, fine abrasive block or very fine wet-and-dry paper used gently along the blade removes surface deposits without destroying the edge.
Work in the direction of the edge rather than across it, use light pressure, and clean and dry thoroughly afterwards. Deep pitting cannot be removed without reshaping the edge, at which point replacing the blade is the sensible option.
Storage Conditions
A dry drawer with some airflow is better than a sealed box. Under-sink cupboards are the worst common location, since they are humid and prone to condensation.
Where a tool is not used for months, storing it wrapped in a dry cloth rather than in plastic prevents trapped moisture. Plastic bags and airtight containers hold humidity against the steel, which is the opposite of what is wanted.
Replacement Is Normal
Blades are consumables. Even with excellent care, an edge used regularly will eventually need replacing, and this is not a sign of poor quality.
The relevant question when buying is whether replacements are available and affordable, since that determines whether the tool has a ten-year life or a two-year one.
